Rhubarb Loaf Or Muffins

2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups packed brown sugar
1/2 cup oil
1 egg
1 cup buttermilk
1 teaspoon vanilla
2 cups rhubarb - chopped

1/2 cup brown sugar
1 tablespoon melted margarine
1/2 teaspoon cinnamon

Combine flour, baking soda, and salt. In another bowl combine brown sugar and

oil. Add egg, milk and vanilla. Stir into dry mixture with rhubarb until flour is incorporated. Spoon
