1 cup plain nonfat yogurt
1 cup chopped apple (about 1 medium)
1/4 cup frozen (thawed) apple juice
concentrate
spicy apple bran muffins
1/4 cup Egg Substitute or cholesterol-
free egg product
spicy apple bran muffins
3 tablespoons vegetable oil
1 cup oat bran
1 cup all-purpose flour
1/4 cup granulated sugar
3 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 tablespoon packed brown sugar

Heat oven to 400 degrees. Spray 12 medium muffin cups, 2-1/2 X
healthy or low fat zucchini bread recipe
1-1/4 inches, with nonstick cooking, spray or line with paper baking cups. Mix yogurt, apple, apple juice
low fat corn bread recipe
concentrate, Egg Substitute and oil in large bowl until blended. Stir in remaining ingredients except brown sugar all
pumpkin bread low fat
at once just until flour is moistened. Fill muffin cups about 7/8 full. Sprinkle
pumpkin bread low fat
with brown sugar. Bake 20 to 24 minutes or until golden brown. Immediately remove from pan. 12 MUFFINS.

    35 min 20 min prep Change to: muffins US Metric Muffin Mix 1 1/4 cups rice flour 1 cup sweet rice flour 1/2 cup toapica flour 1 teaspoon baking soda 4 teaspoons baking powder 1 teaspoon salt 1 teaspoon xanthan gum 1/3 cup sugar or 1/8 teaspoon stevia powder To Make Muffins 2 eggs 2 tablespoons vegetable oil 1/3 cup soymilk or water or fruit juice 1/2 cup currants (optional) or raisins (optional) or nuts (optional) or berries (optional) Mix all ingredients together and store in an airtight container for future use. The second ingredient is sweet white rice flour. I have tried to change it on here before. The sweet white rice flour is a bit more " glutenous than the plain white rice flour. Muffins to 1 cup of mix, beat together:. 2 eggs. 1/2 teaspoons vanilla extract. 2 tablespoons vegetable oil. 1/3 cup of any non dairy liquid ( soy milk, water, fruit juice etc. ). Pour into flour mixture and beat until smooth. 1/2 cup currents, raisins, nuts, dates or berries etc. can be folded in at this point. Spoon into greased or paper lined muffin tins. Bake 375 F oven for 12 15 minute. Makes 6 muffins. Cake Mix as for muffins but add more sweetening ( sugar , stevia , honey etc. ). Eg. If you are making an orange cake use orange juice for the liquid and some orange zest. Spoon dough into greased 8" round cake pan. bake in preheated 350 F oven for 20 25 minute. Makes one 8 " round cake.

    i want to make muffins, but cant decdie on what kind, and i dont like the recipes i have. does anyone have any gluten free muffin ideas?..please dont give me sites to go on, just your recipe,thanks!:D
