Pre heat oven to 375F. Salt and pepper room temperature roast after rubbing down meat with soy sauce. Place meat on rack in shallow pan. Roast 1 hour at 375F. Turn off oven. DO NOT OPEN OVEN DOOR. Allow 3 hours in oven to complete coking time (a little longer won't matter). About 20 minutes before meal time, turn oven to 300F to warm roast. Works with any size or type of roast. Excellent for football games - cooks while you watch the game.
